Forget fruit cake! Dessert this Christmas is coming in the form of a cookie, sometimes a colossal cookie.
People who work at Eileen's Colossal Cookies in Rapid City are in the midst of their busiest season. In the past two weeks, more than 62,000 frosted cookies alone have sold. That equates to 720 dozen eggs and around 2,800 pounds of flour.
Cookie store owner, Jill Eisenbraun, braces for the busy season each year, hiring extra help and of course working long days. She says it can be hard to keep up with the demand, but they've managed to do it, helping out quite a few people who simply don't have time to do any Christmas baking. "People joke that we did their Christmas baking for them," Eisenbraun said.
All of the cookies are made from scratch each day right at the store.
