12 oz creamy peanut butter or soy butter
1/2 c softened butter plus 2 tablespoons
3 c powdered sugar
1 tsp vanilla
milk chocolate chips
Mix all ingredients until combined. Scoop dough into portions and chill. Roll portions into balls and chill again. Use a fork or skewer to dip the balls into melted milk chocolate. Allow excess chocolate to drip off, then place chocolate coated balls on parchment to cool. Store in a sealed container in a cool place.
Add crisped rice cereal for a lighter and crunchier candy.
