Acapulco Dish


1 1/2 lb ground beef
1 onion, chopped
2 garlic cloves, minced
2 TB oil
1 16oz can Tomatoes and Chilies
1 pkg taco seasoning mix
1 tsp cumin
1 tsp chili powder
1 4oz can diced green chilies, drained (optional)
1 small can sliced black olives
crushed cheese flavored tortilla chips
2 c grated Monterrey Jack cheese
1 pint sour cream
1 1/2 c grated sharp Cheddar cheese

Preheat oven to 350 degrees.

In a large heavy skillet, saute the first 3 ingredients in the oil until browned. Pour off any excess liquid.

Add the next 6 ingredients (5 if not using green chilies) and simmer, covered for 30 minutes. Layer half the chips in the bottom of a greased baking dish. Spread meat mixture on top. Sprinkle with the Jack cheese and cover with the sour cream. Add the remaining chips and sprinkle with the Cheddar cheese.

Bake for 30 minutes or until bubbly.
