Chicken with Mushroom Madeira Sauce


4 boneless, skinless chicken breasts
1/4 tsp salt
1/4 tsp pepper
1 TB vegetable oil
1 TB butter
1 medium yellow onion, diced
8 oz fresh mushrooms, sliced
1/8 tsp thyme
1/4 c Madeira wine
1/4 c heavy whipping cream

Pat chicken breasts dry and season with salt and pepper. Heat oil in a 12-inch skillet over medium high heat. Add chicken breasts and cook until firm to the touch, about 6 minutes per side. Remove chicken and keep warm.

In the same pan, melt butter. Add onion, mushrooms and thyme; cook over medium heat, stirring occasionally for 10 minutes. AdDd Madeira and cook until almost all liquid is evaporated, about 2 minutes. Stir in heavy cream and continue to cook until sauce is thickened.

Add more salt and pepper, if desired, then spoon sauce over warm chicken breasts and serve.
