Dakota Thyme Fresh Peach Cobbler


1 lb fresh peaches, peeled and sliced
1 TB lemon juice
1/4 tsp cinnamon
1 TB oat flour
1 TB brown sugar


1/2 c rolled oats
1/4 c butter
1/2 c brown sugar
1/4 TB oat flour
1/4 tsp nutmeg
pinch of salt
brown sugar

Whipped Cream

Preheat oven to 350 degrees. Lightly butter ramekins or baking dish.

Combine peaches, lemon juice, cinnamon, sugar and flour. Pour into ramekins or baking dish.

Combine remaining flour, oats and brown sugar. Cut in butter. Sprinkle oat mixture over peaches. Bake uncovered for 15 to 20 minutes (ramekins) or 30 to 40 minutes (baking dish) until lightly browned.

Serve warm with whipped cream.
