Grilled Beef Tri-Tip with Tropical Fruit Salsa


1 beef tri=tip roast (1 1/2 - 2 lbs)


2 TB honey
2 TB fresh lime juice
2 tsp ground cumin
1 tsp dry mustard
1 tsp salt

Tropical Fruit Salsa:

1 1/2 c diced papaya or mango
1/2 c diced plum tomatoes
2 jalapeno peppers, seeded, finely chopped
2 TB sliced green onion
2 TB fresh lime juice
1 TB chopped fresh cilantro or parsley
1 TB honey

Combine glaze ingredients in small bowl.

Place roast on preheated medium-high heat grill. Cover and cook for 25 to 35 minutes, turning once. At last 10 minutes of cooking, baste with glaze.

Meanwhile, combine salsa ingredients in bowl and stir to combine. Refrigerate until ready to serve.

Insert instant read meat thermometer in roast and remove from grill when temperature reaches 140 degrees. Tent with foil and let rest for 10 to 15 minutes.

Slice and serve with salsa on side.
