1 lb green beans, stem ends snipped off
1 TB + 1 tsp olive oil
salt and pepper
1 TB lemon juice
1/4 c chopped roasted red peppers (if jarred, then drained)
1/2 c pitted kalamata olives, chopped1 tsp oregano
1/2 feta cheese, crumbled
Preheat oven to 450 degrees.
Line rimmed baking sheet with aluminum foil; spread beans on baking sheet. Drizzle with oil, toss to coat. Sprinkle with 1/2 tsp salt, toss and distribute in even layer Roast 10 minutes. Toss and roast 10 minutes more or until browned and slightly shriveled.
Meantime, in a medium bowl combine 1 teaspoon olive oil, lemon juice, roasted red peppers, olives and oregano.
After beans have roasted, cool then combine with remaining ingredients in bowl. Toss to coat then serve topped with crumbled feta cheese.
