1 TB olive oil
1 TB butter
2 tsp minced garlic
2 shallots, minced
1 c vodka
1 c chicken broth
1 (28oz) can crushed tomatoes
1/4 tsp crushed red pepper flakes
1/4 tsp salt
1/4 tsp black pepper
1/2 c heavy cream
1/2 c chopped fresh basil (or 1 TB dried)
1 (16oz) pkg penne pasta, cooked according to package directions
1/4 c grated Parmesan cheese
Heat olive oil and butter in a12-inch saute pan. Add garlic and shallots; saute for 4 minutes on medium heat. Add vodka and cook until reduced by half, about 2 to 3 minutes. Add chicken broth, tomatoes, red pepper flakes, salt and pepper. Cook until sauce bubbles and then reduce heat to simmer. Slowly stir in cream and basil. Toss with pasta and Parmesan cheese.
Serves about 6.
