large baking potatoes
chopped cooked bacon
Coat potatoes with a little vegetable oil.
Bake potatoes in oven until done, about 1 hour. Do NOT cook in a microwave.
When done, cool 30 minutes in a refrigerator. Then cut in half and scoop out enough "meat" of the potatoes to leave a 1/8"-1/4" skin. Return to the oven for 30 minutes to crispen.
Remove from oven then douse with seasoning salt. Turn upside down and cook for another 15 minutes.
Finally, remove and cool. Stuff with cheddar cheese and top with bacon. Place under broiler for 2 minutes or until cheese is just melted. Serve with sour cream or your favorite dipping sauce.
