1 pie crust
2 eggs
3/4 c sugar
1 tsp cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp cloves
1/8 tsp nutmeg
1/8 tsp allspice
2 c canned sweet potatoes (or use fresh - cooked and peeled)
1 c milk
Preheat oven to 425 degrees.
Combine all ingredients in a medium mixing bowl. Blend with an electric mixer until smooth. Pour into pie crust, and cook for 15 minutes.
Reduce temperature to 350 degrees and continue baking for about 45 minutes or until a toothpick inserted in the center comes out clean.
Remove pie from oven, cool, then chill in refrigerator overnight, or for at least 4 hours. Serve with ice cream or nonfat vanilla yogurt, or, of course, whipped cream.
