Halibut Steak with Wine and Tomato Sauce

4 halibut steaks, 5-6oz each (can use cod, tilapia, etc.)
3 tsp olive oil
1 tsp basil
1 tsp paprika
2 TB butter
1 small onion, chopped
1 clove garlic, chopped
4oz fish or chicken broth
pinch of nutmeg
1 lemon, sliced for garnish
4 oz red or white wine
1 c peeled tomatoes, chopped
2 TB chopped parsley
salt and pepper

Marinate fish steaks in basil, paprika and butter for a half hour or so.

Heat the butter and saute the onion until light brown. Add the rest of the ingredients, except the lemon and parsley, simmer for 10 minutes over a medium heat, stirring occasionally.

meanwhile, heat another fry pan with no oil. When hot, place the fish in the pan and cover with a lid. cook for 4 minutes on each side, turning once, add the sauce and parsley, bring to a boil. Serve in a platter garnished with lemon slices.

Serve with a Cabernet Sauvignon or a Chardonnay - a splash for the pot and two for the cook!
