Pumpkin Brittle (to go with Pumpkin Ice Cream)


2 tablespoon butter
½ teaspoon of vanilla extract
¼ cup brown sugar
¼ cup Lyle's Golden Syrup (available at Dakota Thyme)
1 cup pumpkin seeds
sea salt

Melt butter in a small saucepan. Stir in honey, Lyle's Golden Syrup,Vanilla,
and Honey. Place a candy thermometer into the pan. Bring the mixture to a
boil and continue cooking until it reaches 300 degrees. Do not stir.
Once the mixture reaches 300 degrees add the pumpkin seeds and stir. Return
the mixture to a boil and pour the mixture onto a sheet pan lined with
parchment or silicone baking sheet. Sprinkle with sea salt. Allow the
brittle to cool completely. Break the brittle into pieces and store in an
airtight container.
