Grilled Flank Steak

1 1/2 pound flank steak

1 cup orange juice

¼ cup soy sauce

¼ cup Essie's South American style sauce *

5 cloves garlic, crush and chop

2 teaspoons ground fresh black pepper

Pour orange juice, soy sauce, Essie's sauce, garlic, and pepper in small bowl and whisk. Lay Flank steak flat every ½ inch make a ¼ inch slash on a 45 degree angle to the grain. Repeat in the other direction to form a diamond pattern.  Flip and slice other side the same way. Add steak and marinate in large zip lock bag, remove air. Put in refrigerator for 4-8 hours.

Grill on high heat 3-4 minutes per side till medium rare. Move to warm platter and let rest 5 minutes before slicing. To get wide thin slices, cut at 45 degree angle to the cutting board. Serve as an appetizer, steak salad, or main course with a side. It is also great to take to a grill out or on a picnic.
