1/4 c apple juice
2 TB apple cider vinegar
1 TB honey
2 tsp cornstarch
2 cans (8oz each) sliced beets, drained (or steamed fresh beets)
Combine the apple juice, vinegar, honey and cornstarch in large nonstick saucepan. Cook, stirring occasionally, over medium heat until simmering. Stir in beets; season to taste with salt and pepper. Simmer 3 minutes.
