Cornbread - KOTA Territory News



Gluten Free in 5 Minutes

Serves 2

1 egg
2 tsp canola oil
2 TB applesauce
rounded 1/16 tsp salt
3 1/2 TB cornmeal
1/4 tsp baking powder
1/4 tsp sugar

Baked in two 1-cup ramekins or other straight-sided microwave safe bowls.

In a small bowl or cup, briefly beat egg until almost uniform in color. Add remaining ingredients and mix well to combine.

Spray ramekins with non-stick cooking spray. Pour batter into ramekins and tap base to level batter. Microwave on high for 2 minutes. Bread will rise and then settle a little during baking.

Gently remove from dish, if desired, and cool.
