1 TB olive oil
1 TB red onions, finely diced
1 tsp garlic, minced
2 c heavy cream
8 oz cream cheese
2 c blue cheese, crumbled
pinch of nutmeg
In a thick bottom sauce pan add oil and heat to medium heat, add onions and garlic and sweat until tender. Add cream and cream cheese, bring to a simmer and cook until cream cheese melts. Add blue cheese, stir in well and serve hot with croutons in a fondue service.
Serves about 8 as a fondue.
