1 pound ground pork
1 package taco seasoning
Salad greens or large head iceberg lettuce, torn into bite size pieces
1 small can kidney beans, drained & rinsed
1 large tomato, diced
1 medium green pepper, chopped
½ cup green onions, sliced
½ cup black olives, sliced
1 small bag corn chips or taco chips, lightly crushed
1 cup grated cheddar cheese
½ cup mayonnaise
1 Tablespoon Chipotle hot sauce
Brown ground pork in medium skillet; drain. Add taco seasoning and 2/3 cup water. Cook and stir on low heat until heated through and most of moisture is absorbed. Set aside.
Prepare all ingredients.
For dressing, combine mayonnaise and hot sauce; mix well.
To serve: make a bed of greens in individual salad bowls or on serving plates. Each guest may arrange ingredients as desired. Top each salad with dressing.
One large salad may be prepared where all ingredients are tossed together. For best quality, serve immediately.
Optional: avocado slices or guacamole
