RAPID CITY, S.D. (KOTA TV) - Seth Talmon from Avery Brewing Company says they've got one of the larger barrel aging facilities in the country, having recently moved into a 40,000 square foot facility.
Avery Brewing Co. started brewing sour beers about 15 years ago. Their sour beer is aged in wine barrels (natural oak) with added lactic acid.
Talmon says it's a crossover for wine drinkers. "It gets the complexity that wine has, the different layers, it's great to pair with food."
Their raspberry sour has a wild raspberry on the logo and tastes "just like a wild raspberry," according to Talmon. "Just like you would taste off the vine... A little tart, a little sweet and really nice dry finish to it."
